Spyros Parissis grew up in the picturesque village of Mythinma (Molivos) on the Greek island of Lesvos, famous for its beauty and colourful sunsets. Its wisteria covered-market streets were voted some of the most beautiful in the world. Having been brought up in a family of great cooks and artists, Spyros developed an appreciation and love of cooking and baking from a young age. With the combination of his mother living in Paris for many years and his homeland being located just off the coasts of Turkey, Spyros grew up with a penchant for Greek, French, Italian and Middle-Eastern cuisines.

One of my fondest memories is waking up at 4 am to make the Easter Brioche Breads (Kouloures) with my grandmother, my mother and my aunt. We would then put the heating in the living room on full blast, lay blankets over the sweet breads and let them rise for hours. When they grew plump and springy, I would run to the village bakery with the huge baking trays in my hands. The whole village was imbued with the aroma of the baking breads and spices.

Motivated to follow his dream of opening his own business, Spyros began by baking from home, selling in markets and supplying cafes with his delicious recipes inspired by his native land and other European classics.  After being noticed, he received guidance and help from the New Enterprise Scheme, National Market Traders Federation (NMTF) and United UnLimited (UnLtd).  During this time, Spyros was a finalist in the First Pitch competition of the NMTF programme and he won the silver award in 2013 and the following year the gold award in the Best Product category of the New Enterprise Scheme. 

As a result, and thanks to the help and support from his friends and family, Spyros opened PARISSI, a place where all his life and culinary experience would come together in order to produce new things as well as revisit and recreate traditional recipes.  Spyros always dreamt of a place where people could come and share fresh and tasty food in a good company and great conversation. In other words, a place filled with good people in a cozy and relaxed atmosphere. This is why he also took the decision to found PARISSI in the vibrant community of Brixton. 

Taking on the big step of opening a cafe was one of the hardest and at the same time most exciting things I have done in my life. It has tested me to the limit and has also given me many friends and beautiful moments. PARISSI for me is a way of life, a place where magic happens, a place where incredible people come together and share life.

In PARISSI we use recipes from around the world and also offer tastes from our “own world”, mostly influenced by Spyros’s palate but also those who share life and recipes with us.  With a friendly and personal service, we make sure to make everyone feel welcome and try to share our passion and excitement for good food with everyone who walks through our door.  PARISSI takes you on a journey that begins on the beautiful Greek island of Lesvos and takes you to the vibrant Brixton of London. It involves people from all walks of life with a tremendous drive, creativity and passion.
